Why aren’t penguins listed among the non-kosher birds in the Torah?
Not every bird is mentioned. Some say that they are listed by species not as individuals. But, most important, is the commentary that we do not really know the correct identification of the birds. If you look in a reliable commentary such as that offered by ArtScroll you will see that they prefer to transliterate the names of the birds rather than translate them and then offer possible translations in the commentary.
