From my tenth grade student–Why don’t we say the 13 Ani Ma’amin’s on shabbos? (it isn’t in the siddur as part of shabbos davening)

Interesting question.
I would say it is for the same reason that we don”t wear Tefillin. Shabbat itself is a proof that there is a creator behind this world and all that transpires.
One needs an additional injection of faith during the weekdays and so we recite Ani Maamin. On Shabbat, the day itself infuses us.
