It seems to me that visitation of the sick must not be as simple as I perceive it to be. Are there any guidelines in Jewish Law?

Thank you for your question. There is actually an entire chapter in the Kitzur Shulchan Oruch – The Concise Code of Jewish Law, which is devoted to this topic. It’s chapter 193. The most important rule that is stated there is that although it is a Mitzvah to visit, if the visit will be burdensome in any way to the patient one should not visit.
